Does it still exist? I want to mod the insides and remove the toe wings, is it as simple as taking a knife to the canvas and taking a scissor to the wings?

Pretty much.
Just make sure you don't pop a hole in the outer layer of the canvas because it can get really big and then you've got a shot pair of shoes.
As the universe is curved, there cannot be a straight answer...
