Thank you, I'm a picky eater too, so I appreciate your comments even more.

Last nights caramelized carrots were, perhaps,
the tastiest thing I've eaten in months.

I like a blend of soy and wheat proteins, corn and rice flours, sausage seasonings, and bacon fat.

With the wheat in there, I imagine it is much chewier than tofu -- more like seitan.

Because I'm mainly concerned with making the best tasting ultralight trail foods. Making fake meat from powders is much lighter than bringing dried meats, and offers a greater amount of variety too.

You make all of this stuff you posted with just a pot and fire?

Or what do you pack on your hikes to make your meals?

I made most of this in the kitchen, but I'm mostly working towards getting a backpackers cookbook published by the end of next summer.
I keep all my food and cooking supplies in this bucket.
I made my own stove and windscreen from old cans
my bowl and plate thing does double duty as a cutting board

Cool. I'd love to try taking a hike with you if I'm ever in your area. I've hiked trails before...never camped but always wanted to.
