Well a couple of points.
Firstly, things that evolve certainly don't mean that they're the best way of doing things. In fact in pretty much all life forms, and humans are good example, we see pretty big "design errors" - and could improve them alot (our backs, and knees and wisdom teeth are all good examples).
Secondly homo sapian sapians evolved around 200,000 years ago, although species are not static and we're still evolving since then, when you look at our digestive system and metabolic functions, what's happened over the last 15,000 years has hardly had any impact at all.
We are clearly not designed to eat great quantities of red meat, and we're clearly not herbivores either. Most likely we've evolved to eat fruit and insects, possibly up to small rodents, birds and seafood. Just because we've evolved to eat insects, that doesn't mean that I'm going to start.
