Sewing a 12 Panel

Right now I'm in the middle of stitching a 12 panel footbag out of old T-shirt material. I'm about half-way through it, and thus far have stiched 5 pentagons around one in the middle.

I have two questions:

1) If I were to tie off this piece of thread, how would I go about knotting it?
2) Or, should I stitch the whole thing as one, as opposed to connecting two halves? I read that stitching two halves together will create an oblong bag...

Thoughts/suggestions?
