How do they measure the 'hotness' of hot sauce?

Not a lot of people know this, but the heat index of hot sauce is measured in Scoville Units(More commonly referred to as 'SU' or 'SU Count'). The Scoville scale is a measure of the hotness of a chile pepper. These fruits of the Capsicum genus contain capsaicin, a chemical compound which stimulates thermoreceptor nerve endings in the tongue, and the number of Scoville heat units (SHU) indicates the amount of capsaicin present.

For example, Franks Red Hot is 2,000 SU. Here are some other examples:

Tobasco- 2,500 SU
Dave's Total Insanity Sauce- 47,000 SU
Da' Bomb Beyond Insanity Hot Sauce- 119,700 SU
Pepper Spray (Mace)- 900,000 SU
Police Grade Pepper Spray- 1,500,000 SU
Pyro Diablo Hot Sauce- 1,500,000 SU
Fuego Inferno Hot Sauce- 2,000,000 SU

The Hottest Known to Man:

BLAIR'S 16 Million Reserve- 16,000,000 SU

Blair's 16 Million Reserve is the latest in the line of reserves from Blair. This reserve bottle contains 1ml of pure capsaicin crystals. 16 Million Reserve is not to be consumed or even opened without using extreme caution.

Basically if you even inhaled it, it would cause your entire face and lungs to burn, and probably your face would peel as well. The burning might stop after a day or two...Now THAT'S HOT!

Your supposed to add a drop to huge pots of chilli, say like a pot with enough chilli for 50 people.

On a related note I saw a hot sauce competition on tv where about 7 judges each tried the tiniest drop of a hot sauce called "The Source" that comes in around 7,100,000 (edit) scoville units. The lady that opened the bottle had to wear a surgical mask and said the fumes were burning her eyes, lol.

Blair's 16 Million Reserve is like when teachers warn you not to look at the burning magnesium...if I ever had my hands on that stuff, I would just have to open it to see what happens, although I've been warned.

I got a question for you hot sauce guys. Why do you guys eat it, knowing that your tongue, mouth, throat, etc. is going to burn like crazy, and you won't be able to taste anything else for so long? Is it some sense of power you feel that you can take it hotter than someone else? Or is it just fun? I guess I would say it's fun, but I don't eat it as much as you guys probably do. I just try some just to try some, and then I'd rather stick to sweet and spicy for the rest of my meal...sweet and spicy...WHAT!...yeah go ahead and slap me. :P

One time when I was little, my sisters and I were at my grandpap's, and they decided to go in his garden and play with the hot peppers. I think they ate the seeds or something, but anyways they made their eyes water when they ate them, and then they wiped their eyes... 8O I just sat there watching them like, "Yeah you're stupid..." :lol:

It is said that the burning sensation from capsaicin is addictive. It is also said that one becomes “conditioned” to this sensation. The reason is that during the eating of chiles, a chemical in the chile pepper called Capsaicin, irritates the trigeminal cells. These are pain receptor cells located throughout the mouth, the nose and the throat. When your body's nerves feel the pain induced by the chemical on these cells, they immediately start to transmit pain messages to your brain. Your brain receives these signals and responds by automatically releasing endorphins (the body's natural painkiller). These endorphins kick in and act as a painkiller and at the same time, create a temporary feeling of euphoria, giving the chile pepper eater, a natural high.
The body's other responses include increasing the heart rate to increase the metabolism, increasing salivation in order to try and refresh the mouth and by increasing the rate of sweating by the body. Your nose also starts to run and the gastrointestinal tract slips into high speed. Hot & spicy food lovers soon begin to crave these feelings and are soon hooked.

i was watching the food chanel one time and they were doing a hot/spicy special, i'm pretty sure they had dave's insanity sauce on it. anyway they were talking about the hottest kind of dave's, and i think they said it could be used to take off paint and it could remove oil stains from your driveway as well....WOW 8O

Tried something today that was REAAALLY good, all you spicy food lovers listen up.

CHILE POWDER (not to be confused with chili powder) on fruit. Apparently this is a favorite snack in Mexico. You put some chile powder on pineapple or watermelon. It's sooooo good. It kinds adds a salty/spicy taste to the fruitiness. Give it a try!

Im Thai, Thai people usually eat peppers freshly(i cant without crying though)... i found this on some site

Thai peppers are small, seldom growing larger than 1 to 3 inches (2.5–7.6cm) long. They are usually less than 1/2 inch (1.2cm) wide, but provide plenty of heat. These slightly curvy, potent peppers are typically bright red or deep green, and end in a sharp point.Thai peppers are extremely hot, though they can vary in their heat ratings from 75,000 to 150,000 Scoville heat units.

but habanero peppers are 200,000-350,000. beats the shit outta thai peppers. :cry:


well, anyways i havent tried too many hot sauces and im not sure which i like best.

Oh man I tried Dave's Insanity Sauce the other night. WOW. I consider myself a hot sauce veteran, I can put 3 taco bell fire sauce packets on a burrito without blinking, tabasco barely registers for me, I consider myself to have a fairly good tolerance.

Well I put about 3 dollops of Dave's Insanity Sauce on my hot dog the other night. Man that kicked my ass. My whole mouth was on fire for a good 10 minutes and my lips kept burning for at least an hour. It was humbling, and very very good.

A little bit of proof for myself that the hot sauce is addictive, is that when I moved to Germany, I had not had spicy food in 3 months...The other day, for my birthday ( ;) ) my grandmother sent me Franks red hot sauce. Well, 3 months ago the franks red hot sauce, just was like ketchup, you just naturally put it on meats because it tastes so damn good. Immediately my tongue went into "oh my dear god that is holy" mode, and my first instinct was just to drink it (naturally one I did not follow). My tolerance did fall alot during the three month period, it was a step below spicy enough to make you sweat.

I hope it doesn't run out to fast...

i eat way too much hot stuff.

fire packets dont phase me. theyre kinda weak imo.

i eat peppers from the fridge constantly (better than a fatty snack, and more fun too) pepperoncini, and red peppers. Crushed red peppers go on everything.

i use habenaro pepper sauce on everything i eat. pizza, (cheez-its), wings, chicken sandwich, .....


i had this thai restaraunt food the other week, and they had "dragon sauce", which i belive had thai peppers... but maybe just peppers... but it made me sweat, and gave me hot shits. that hasnt happend in a while.

i hope someone brings some kickass hotsauce to nyj. that should be one of the contests.
