flip4mac is a definite necessity for playing windows media formats in quicktime.
vlc media player. Plays virtually all formats, gives you fullscreen (something you have to pay for in quicktime)
Adium. better than iChat. Tabs, customizable contact lists/ chat windows.
chax. an addon for iChat that allows tabs as well as other features.
handbrake. rip your dvds.
stuffit expander. allows you to decompress file formats other than .zip
Divx plugin for quicktime. It installs a divx player. it's a neat player, but uses a lot of system resources. i didn't keep the player.
This will cost you:
Toast titanium. Disc burning software. Works better than the built in burning features in OS X. Well worth the money if you plan on burning dvds and cds.
Those are the apps that i find i need for my Mac to do everything i want it to. There might be some others, but these are the essentials.
