I think colors that stand out well is the best advice I can offer. Personally, I would go for colors that have a good mix of both warm and cool; white and black are a great addition no matter what. There's not a good yellow out on Field's (Tulip), at least one that is strong like most colors, so I will put that aside for your first purchase. Spanish Gold is strong, but stretchy and pilly.
Print colors are pretty weak, so I wouldn't buy them as you're going to start out into stitching. By all means you can, but I think strong and reliable facile is a good medium to work with first.
Here's a small list of some pretty standard and relaible colors to work with:
Flash Red
Burnt Orange/Sedona
Atlantis/Splash Blue/Lapis
Petit Pois/Green Grape
Princess Purple/Punch
Country Cream
Blacknoir
Rapture Rose/Zinnia
I haven't tried the newer colors available (Sedona, Inca Gold, Burnt Orange, etc.) so I can't really offer much feedback. However, seeing that they're listed under the Extrawide section at Field's, there shouldn't be a problem.

Definitely find a fabric store near your area. I don't know what area you live in, but find a fabric store and ask for "ultrasuede light." Sometimes they'll charge prices much more convenient than what is priced online, so much that you can haggle a price down that is more convenient for you.
However, I highly, highly recommend shopping at Field's just once to know and understand the type of material you're working with. Once you have the fabric at hand, it'll be easier to explain to shopkeepers that hold a variety of suede fabrics to know what you plan on buying.
Long story short, Field's Fabrics is the most reliable website to shop for ultrasuede light. If you can find a store near you that has ultrasuede light in stock, it's a blessing.

It's a dirty white, to be honest.
And Country Cream doesn't look very appealing when dirty. However, it breaks in super quick.
