Damn that looks delicious! I'm not much for vegetarian foods but I've recently overhauled my diet to include alot more greens and I would love to try that. I've recently been cooking every meal (mostly chicken and beef with veggies) and I've been experimenting with marinades and rubs. What's your favorite way to cook vegetables? I usually resort to some extra virgin olive oil in a pan and cook until tender (broccoli first, then add in mushrooms, onions, peppers, and garlic). I could use a change of pace.

I can't believe i just found this thread... I have been an avid cooker for a few years now. I grew up with amazing homecooked food and when I was finally on my own I couldn't settle for Ramen.

More recently I've been exploring the wide world of baking with yeasts. Currently I live in an efficiency that has a really crappy small oven that can't hold a temperature to save it's miserable existence. So I've been using my toaster oven with incredible results.

Impressive, especially for a toaster oven!

what part of the fennel is that? I know the stalks have the black licorice flavor, and the seeds have the spicy italian flavor, what are those?

I made a Ham and Potato soup the other day. Boil potatoes, celery, onion, ham and carrots. Then I made a white sauce (5 T butter, melt it, whisk in 5 T flour, no lumps, add 2 cups milk) and then integrate into the other pot, heat thoroughly and serve immediately. It was really good, not too salty, and lots of good stuff.

I made a grilled jambalaya to take backpacking this weekend, starting with an apple wood smoking of the ingredients.

I've been trying to make more dinners for my daughter to try (that she has not tried yet! ) other than chicken nuggets and french fries. I also wanted to add more fresh veggies to my diet. I made a chicken alfredo with fried potatoes and carrots dinner with salad. I made a pork and brown gravy dinner with au gratin potatoes and sauteed green beans, onions, and port. mushrooms. I made an "anti-pepperoni bread" with spinach, bacon, and mushrooms with olive oil, crushed pepper, oregano, and parmesan brushed on the top. And today I made chicken fajitas with whole grain tortillas and brown rice. For never really cooking real dinners, I am quite impressed with myself. :D

My breakfast today.

Pasta in a sauce of cream, homemade pesto, salt and pepper, red wine, capsicum and italian ham.
On top some parmesan cheese.

So good!
