Symple Legover/Switch
Trying to figure this out in preparation for the schooling of DLO, any advice?

Just stop sucking. Duh.
Basically after you set it, you want to keep the setting foot off the ground and then jump with the other leg and do a legover dex with both feet off the ground, and then plant the setting foot at the same time that you delay with the leg that did the legover dex. So say you set from left toe, you set>keep left leg in air>jump with right leg (while left leg is still off the ground) and do legover dex>plant left leg and delay with right toe. Once you get the idea you can do it from clipper too. If that doesn't make much sense then I can prolly help more at the next session.

I advice differently than Ken.
If you want to skool Symple Legover for DLO/Eggbeater, you should do it like
waist high set > magic hop > good big symple dex > stall
use energy for the dex more than you need, jump well off as if you were doing a symposium move. Doing consecutive Symple Legovers like that is good skooling for advanced Symple Legover moves (DLO/Eggbeater).
Now IF you do Symple Legover without the magic hope, not setting the bag at all but using the power from your dexing foots jump to bring it in air - now that's what some players in Finland (used to) call "chicken style", because it looks funny and many newbies start off by learning it like that. I wouldn't even call it symple, because there's no magic hop and the dex is mid-time. But I know these aren't good arguments not to call it symple, because it hasn't been determined, but I wouldn't call Pogo op Toe a Symple Mirage either.

I agree with Anz, and I love this description "chicken style" (I wish that I was humiliated by it when I was starting out, but I started a very long time ago).

I have the right idea on what the "magic hop" is, and was hoping to see a video describing that component a little clearer, but what I really want to ask is this: what's the best way to train on it? Is it, dare I say, skipping?

I don't know if I've done a toe set symple legover
I always hit it as clip set far side, or else with a mirage or illusion before it.
edit: Magic hop. Ignore the word "magic" in that term - it's just called that because it helps so much with some tricks. Anssi just means to very slightly hop with the dexing foot so that you're in position so that the bag is in the position where the rest of the move is in the easiest possible place for the move.
Regarding training, I think it's just a matter of practising the particular trick, and trying to figure out why you drop it when you do and correcting the errors. Obviously you want to be good at non symple legovers and maybe some full symposium tricks like symp mirage before spending too much time working on this. Working out the footwork without the bag might help too.
