That is gross, but I think mayo is nasty. On a side note, European mayo is delicious! I was irked out when I went to Europe and they served it with fries but it is completely different and so good. peng: I think due to kimchi belonging to a culture with a much different approach to eating than is typical in North America it can't really be classified strongly. Of course, it can be used as a condiment, but whether it's considered a "condiment" in traditional korean cooking is another thing. By my understanding, it's more a small side dish.
re-sauce: I guess I would say that while condiments are "optional" savoury type things used to enhance the flavor of a meal, a sauce is an integral part of the meal. Eggs benedict would not be eggs benedict sans-hollandaise sauce, fettucini alfredo can't exist without alfredo sauce, etc. However you can add something like a salty white cheese to fettucini alfredo as a condiment. The presence of it doesn't alter what the meal is.
This is basically splitting hairs, though, and I think the nature of this hair-splitting is kind of ridiculous. Cooking experimentally and exploring is something I really enjoy and this kind of hair-splitting doesn't seem to have much place in it.
My favorite condiment is that Japanese mayonnaise mixed with sri racha sauce.
